I'm a fancy person who likes fancy food. That's why I learned how to cook well—my tastes run $$$$, so I needed to learn how to access that all the time.

But today is Friday. I have worked about 60 hours this week and I have another 20 hours in front of me to finish this project.

So I am not making my salad from scratch. (See photo).

I didn't measure for dinner—I chopped some little potatoes, threw them in a bag, drizzled some olive oil until it “looked right”, and threw in some salt. Then I grabbed the scissors and cut up some fresh rosemary into teeny tiny pieces until I didn’t feel like cutting anymore, and then dumped it in the bag and shook it. I dumped the potato mixture onto a cookie sheet and slid it into the oven under the chicken.

The chicken thighs with pepper and salt and garlic are cooking at the same time. The prep was about the same.

The house smells fantastic. The meal will be great. And there was barely any stress. I took the short cuts.

Buy the pre-cut veggies.

Spring for laundry service.

Let the neighbor kid cut the grass.

Etc.

You do so much. You don't have to do it all.
